Recipe Title: Stir-Fried Garlic Lamb

Ingredients:
350 g/12 oz lamb fillet                                                            Servings:
2 tablespoons Chinese wine or dry                                             4
sherry
2 tablespoons light soy sauce
1 tablespoon dark soy sauce
1 teaspoon sesame oil
2 tablespoons sunflower oil
6 garlic cloves, thinly sliced
1x2.5 cm/1 inch piece fresh root ginger,
 peeled and chopped
1 leek, thinly sliced diagonally
4 spring onions, chopped

Recipe Instructions:
Cut the lamb into thin slices across the grain.
Mix the wine or sherry with the soy sauce and
sesame oil. Add the lamb and toss to coat the
slices thoroughly. Leave to marinate for 15 minutes.
 Drain, reserving the marinade.
 Heat the sunflower oil in a wok or deep frying pan
over a moderate heat. Add the meat about 2 teaspoons
 of the marinade. Fry briskly for about 2 minutes until the
meat is well browned.
Add the garlic, ginger, leek and spring onions and stir-fry
for a further 3 minutes. Serve at once.
