Recipe Title: Baked Fish

Ingredients:
1x1.5 kg/3 lb fish (grey mullet, salmon                        Servings:
or salmon trout), cleaned                                                       8
1 small onion, finely chopped
325 ml/11 fl oz white wine
50 g/2 oz butter, melted
For The Garnish
1-2 canned pimientos
strips of thinly pared lemon rind, lime
 rind and cucumber peel
sprigs of fresh herbs (tarragon, chives,
 Chervil)

Recipe Instructions:
Rinse out the fish thoroughly with cold water.
Line a roasting tin with foil and make 2-3 diagonal
slashes across the thickest part of the fish flesh on
 both sides. Arrange the fish in the tin.
Spoon the onion and 4 tablespoons of the wine over
the fish, then spoon the butter over.
Wrap the head and tail of the fish with foil to prevent them drying.
Bake for about 45 minutes, basting once or twice, until the flesh is
opaque (test by inserting a knife into the thickest part, near the bone),
and the skin rubs off easily.
 Transfer the fish to a serving platter and allow to cool.
When completely cold, garnish the fish.
Cut the pimientos, lemon and lime rind and cucumber peel into
shapes and strips using a sharp knife.
Arrange around or on the fish with the herbs.
